52 Weeks to Family Preparedness for Two
Week 33
Ezra Taft Benson – When the economies of nations fail, when famine and other disasters prevent people from buying food in stores, the Saints must be prepared to handle these emergencies.

Food Storage and Preparedness Challenge Of The Week:

Food Storage Purchase 6 lbs. Jam

Extra Item Purchase 20 lbs Oats

Family Prep: We are going to start putting together our emergency car kits. So for this week you task is to get a bin, box, or bag of some kind that you will keep in the trunk of each vehicle. Put in this kit one extra pair of clothing. Next week we will start gathering other supplies.

Spiritual Preparedness: Personal Revelation is so important to our obedience to the commandments and to our understanding of the latter days – the time in which we live. Take some time to study this subject by using the dictionary, index and topical guides in the scripture.



Dad's Cookies
2 cups fine oatmeal
2 cups flour
3 teaspoons soda
1½ cups sugar
2 eggs
1 cup fine coconut
2 teaspoons ginger
2 teaspoons cinnamon
1 teaspoon allspice
1 cup shortening
½ cup corn syrup
Mix dry ingredients. Add syrup to beaten egg before
mixing everything together. Roll in balls, bake in hot
oven at 400 degrees until brown.

Fry Bread
4 cups flour 1 tablespoon salt
1 cup shortening 1 ½ cups warm water
Stir together the flour and the salt. Cut in shortening. Add warm water to make a soft but not sticky dough. Let rest 15 minutes. Divide into balls about the size of an egg (for Navajo Tacos, I make bigger balls; maybe double the size of an egg). Shape into patties, poking a small hole in the center of each to let steam escape. Deep fry 'til golden on each side. Drain. For Navajo Tacos, serve topped with chili, grated cheese, chopped lettuce, tomatoes, salsa, olives, sour cream, guacamole, or whatever you like. These can be served with icing sugar for a snack, or gravy for a bread and gravy.

The counsel to have a year's supply of basic food, clothing, and commodities was given fifty years ago and has been repeated many times since. Every father and mother are the family's store keepers. They should store whatever their own family would like to have in the case of an emergency.....store a year's supply.....that might keep us from starving in case of emergency. James E. Food Storage and Preparedness Challenge Of The Week:


Food Storage Purchase 8 Cans of Vegetables

Family Prep: Your 72 hr. kit and gear box and flu kits should be completed. You may add to them as you see fit or add items you skipped. We will move on to other things next week.


Spiritual Preparedness: Take time to reflect upon the lessons you have learned from your mother. Think about how you have applied them in your life.

Bean and Rice Soup
1 ¼ cups dried beans – your favorite kind
2 tbsp oil
2 tbsp whole wheat flour
6 ¼ cups water
¾ cup powdered milk
½ tsp salt
taco seasoning
1 cup rice
Rinse and soak beans and cook them until tender. When done drain and set aside.

In large saucepan, add oil and warm over medium heat. Sprinkle flour over warm oil and let sit for one minute. Stir together to make a paste. Let cook for one minute. Add water and powder milk and stir. Add beans, rice and seasonings and bring to boil. Reduce heat and cover. Let simmer for 30 minutes. Can be served with corn chips, or corn bread.

Easy Chicken & Rice
2 cups milk (or use powder milk and water equal to)
2 cups uncooked rice
2 cans cream chicken soup
1 tsp salt
1 cup chicken tvp & 1 cup water or 1 can chicken
1 can mixed veggies – optional
Preheat oven to 350 degrees. In bowl, combine milk, rice, cream soup, veggies, tvp and water (or chicken) Pour into greased 9 x 13 pan. Cover and bake for 30 minutes. Take out of oven and stir. Bake another 30 minutes or until rice is cooked through.
You can add lemon pepper, or pepper flakes, or any spices you may like, eg: onion powder or garlic.

Message from the First Presidency

Dear Brothers and Sisters:

Our Heavenly Father created this beautiful earth, with all its abundance, for our benefit and use. His purpose is to provide  or our needs as we walk in faith and obedience. He has lovingly commanded us to "prepare every needful thing" (see D&C  109:8) so that, should adversity come, we may care for ourselves and our neighbors and support Bishops as they care for others.

We encourage Church members worldwide to prepare for adversity in life by having a basic supply of food and water and some money in savings.

We ask that you be wise as you store food and water and build your savings. Do not go to extremes; it is not prudent for example, to go into debt to establish your food storage all at once. With careful planning, you can, over time, establish a home storage supply and a financial reserve. We realize that some of you may not have the financial resources or space for such storage. Some of you may be prohibited by law from storing large amounts of food. We encourage you to store as  much as circumstances allow.

May the Lord bless you in your home storage efforts.

Store some of the spices and seasonings that make meals tasty. Add some sugar or honey.
Family Preparation
Review your existing savings plan or start one. No matter what you have already or what your income,
you can save something for the future. Pay tithing first and then pay yourself- even if it's only a little.

Spiritual Preparedness
Evaluate your family scripture study and family prayer. Find your weak points and set a goal to be
more diligent in these areas


Pinto Bean Snack Cake
2 c. well-cooked pinto beans and ¼ c. liquid from cooked beans
½ c. margarine
1 c. sugar
1 egg
2 t. vanilla
1 c. whole-wheat flour
½ c. instant non-fat dry milk
1-½ t. baking powder
1 t. cinnamon
1 t. allspice
2 c. finely chopped peeled apple
½ c. chopped walnuts
Puree beans with liquid until smooth; set aside. Beat margarine with sugar in bowl until light and fluffy. Beat in egg,
vanilla and bean puree; set aside. Combine dry ingredients in another bowl. Mix half of flour mixture into batter. Add apple,
and walnuts to remaining flour mixture; fold into batter. Coat 9- inch square baking pan with non-stick cooking spray. Pour batter into pan. Bake at 350 for 1 hour. Cool. Sprinkle with powdered
sugar if desired. Serves 20
Fruity whole wheat muffins
1 c. flour and ½ c. wheat flour
2 t. baking powder
¼ t. salt
1 beaten egg or 2 T. dried egg + 2 ½ T. water
½ c. milk or ½ C. water + ¼ C. dry milk
½ c. honey
¼ c. oil
½ c. frozen, fresh, or rehydrated fruit
In a miing bowl stir together flours, baking powder, and salt. Make a well in the center. In another bowl combine egg,
milk, honey, oil. Add egg mixture all at once to dry mixture. Stir just till moistened
. Grease muffin cups or line with paper bake cups. If adding fruit, fold into batter. Bake in a 400° oven for 18 to 20 or till golden. Remove muffins from pans; serve warm.
Makes 12.

Family Preparation Have enough cash on hand to solve emergency situations. Start with $20.00 in ones. Gradually add to it as your budget allows in small bills. This could save your life! Dedicate the funds for emergencies only. Set a goal to have $500.00 or one months pay in cash available.


Spiritual Preparedness Make a goal to go to the temple at least once each month. Attend twice a month when ever possible.


The Ant and the Grasshopper

Once there lived an ant and a grasshopper in a grassy meadow. All day long the ant would work hard, collecting grains of wheat from the farmer's field far away. She would hurry to the field every morning, as soon as it was light enough to see by, and toil back with a heavy grain of wheat balanced on her head. She would put the grain of wheat carefully away in her larder, and then hurry back to the field for another one. All day long she would work, without stop or rest, scurrying back and forth from the field, collecting the grains of wheat and storing them carefully in her larder.

The grasshopper would look at her and laugh. 'Why do you work so hard, dear ant?' he would say. 'Come, rest awhile, listen to my song. Summer is here, the days are long and bright. Why waste the sunshine in labor and toil?'

The ant would ignore him, and head bent, would just hurry to the field a little faster. This would make the grasshopper laugh even louder. 'What a silly little ant you are!' he would call after her. 'Come, come and dance with me! Forget about work! Enjoy the summer! Live a little!' And the grasshopper would hop away across the meadow, singing and dancing merrily.

Summer faded into autumn, and autumn turned into winter. The sun was hardly seen, and the days were short and grey, the nights long and dark. It became freezing cold, and snow began to fall.

The grasshopper didn't feel like singing any more. He was cold and hungry. He had nowhere to shelter from the snow, and nothing to eat. The meadow and the farmer's field were covered in snow, and there was no food to be had. 'Oh what shall I do? Where shall I go?' wailed the grasshopper. Suddenly he remembered the ant. 'Ah - I shall go to the ant and ask her for food and shelter!' declared the grasshopper, perking up. So off he went to the ant's house and knocked at her door. 'Hello ant!' he cried cheerfully. 'Here I am, to sing for you, as I warm myself by your fire, while you get me some food from that larder of yours!'

The ant looked at the grasshopper and said, 'All summer long I worked hard while you made fun of me, and sang and danced. You should have thought of winter then! Find somewhere else to sing, grasshopper! There is no warmth or food for you here!' And the ant shut the door in the grasshopper's face.

Food Storage and Preparedness Challenge Of The Week:
Food Storage Purchase:  8 Cans of Soup

Family Gear Box:      1 Tall candle, light stick, lantern flash    light, and batteries (AA, AAA, Ds)
Family Preparation: Pick your smallest debt and make an effort to pay it off. Apply any spare dollars to this goal. When it's paid off apply its amount towards paying off the next debt. Continue until the Prophet's council to become debt free is accomplished.
Spiritual Preparedness:  Prepare your family spiritually by making sure your Church Magazine subscriptions are up to date. Set a goal to read again all the conference talks.
Johnny Cake
Oil Cooking Spray 1 cup flour
¾ cup yellow cornmeal 1/3 cup sugar
1 tbsp baking powder ¾ tsp salt
1 egg 1 cup milk
2 – 3 tbsp butter melted
Preheat oven to 425 F. Spray a square 8 inch baking pan with oil and set aside. Mix all dry ingredients together. Whisk together wet ingredients in another bowl. Combine together with dry ingredients with a few strokes just until mixed, and transfer to greased pan. Bake until golden brown about 20 – 25 minutes. Serve with hot soup, chili, stew, etc.
Lentil Soup
1 ½ cup lentils rinsed 8 cups water
3 – 4 tbsp cooking oil 1 large onion chopped
2 cloves garlic peeled 2 carrots sliced
1 rib celery sliced salt and pepper
¼ cup beef bouillon
other vegetables as desire
Saute onion, garlic and celery in cooking oil for 2 – 3 minutes soft. Place all ingredients into large cooking pot and bring to boil and boil gently
for about 45 minutes until lentils and vegetables are tender. You can scoop out a good ladle full of this soup and blend it, then return to soup to
give a creamy thickened texture. Add salt and pepper as needed. Serve hot with Johnny Cake or your favorite cornbread recipe.
FYI: Corn is the second most plentiful cereal grown on earth for human consumption. The husks are used for making tamales, the kernels for food, the stalks for cattle,
the silks for medicinal tea. You can fry in corn oil, bake with corn meal, snack on popcorn, sweeten with corn syrup, thicken with cornstarch, and much more. One cup
white corn has about 130 calories, 2 grams of fat, 5 grams of protein, 29 grams of carbs, and 4 grams of fibre with no cholesterol. It is rich in antioxidants lutein and
zeaxanthin, and high in linoleic acid, and vitamin E.

Food Storage and Preparedness Challenge Of The Week:

Food Storage Purchase     8 Cans of Meat

Family Gear Box                 Cooking Supplies: Camp stove or single burner with fuel. Spoon, spatula, multi use pan, pot                                                     holders.
Family Preparation             Change the smoke detector batteries. Vacuum out any dirt or dust and test them.
Spiritual Preparedness       Read the Proclamation on the family. Commit at least one paragraph to memory


COTTAGE CHEESE BEEF STROGANOFF

Serves 4 - 6
1 lb. ground beef Or 1 (15 oz can ground beef )
dash of pepper
½ tsp. sweet basil
5 slices bacon, diced
1 tsp. garlic salt
½ Cup chopped onion
1 can crm mushroom soup
½ tsp. salt
1/4 tsp. paprika
1 Cup cottage cheese
Hot, buttered noodles
In skillet, brown ground beef with bacon (if using canned ground beef, simply heat with bacon). Add onion (rehydrated dried onion may be used, reconstituting to fresh equivalent, but add when you begin to heat with bacon) and cook until tender but not brown. Drain off excess fat. Add salt, basil, paprika, garlic and pepper. Stir in soup and cook slowly, uncovered, 20 minutes, stirring frequently. Blend cottage cheese in blender until smooth. Stir into stroganoff sauce and heat, but do not boil. Serve meat sauce over hot, buttered noodles.

CHICKEN (OR TURKEY) FRICASSEE FOR 1

Makes 1 Cup Broth and 2 Cups Potatoes
1 tsp. Chicken Soup Base
3/4 Cup dry Potato Pearls
1 tsp. dried onion
1/8 tsp. salt
Dash pepper
3 Tbsp. flour
2 oz. Chicken (1/4 cup)
3 Cups water, divided
Cook soup base, chicken, onions, salt and pepper in 1 cup of water. Thicken with as much flour as needed. Boil the other 2 cups of water and stir in the Potato Pearls. Make a "bowl" of the mashed potatoes and spoon broth mixture into it. Increase the recipe according to number of persons to be served. Enjoy

Week 26

"How often do Church members arise early in the morning to do the will of the Lord? How often do we say, 'Yes, I will have home evening with my family, but the children are so young now; I will start when they are older'? How often do we say, 'Yes, I will obey the commandment to store food and to help others, but just now I have neither the time nor the money to spare; I will obey later'? Oh, foolish people! While we procrastinate, the harvest will be over and we will not be saved. Now is the time to follow Abraham's example; now is the time to repent; now is the time for prompt obedience to God's will."

Food Storage and Preparedness Challenge Of The Week:

Food Storage Purchase 5 qts. Cooking oil in smaller containers. A large one might go rancid before you use it all.

Extra Item Purchase     2 qts. Peanut Butter

Family Gear Box Kitchen supplies: paper plates, bowls, cups, serving and eating utensils, paper towels, dish soap, water purification

Family Preparation     This would be a good time to back up all the important information on your computers. Make copies, and keep in a safe, or keep one at an alternate location besides than your home, should fire or something happen.

Spiritual Preparedness Read D&C 59:9 How might you become more unspotted from the world?




Peanut Butter Cookies
Ingredients:
1/2 C vegetable oil 1 C brown sugar or honey
1/2 C peanut butter 1 egg, beaten
1 T sour cream 1 tsp soda
1 1/2 C whole-wheat flour
Cream oil and honey or sugar. Add peanut butter, egg and mix well. Add sour cream, soda & flour and beat well. Form into balls, the size of marbles and place on greased cooking sheet. Press with a fork. Bake at 350° for about 10 minutes.


Peanut Butter Crackle Balls

3/4 Cup powdered sugar 1 Cup peanut butter
½ Cup dry milk powder ½ cup butter or margarine
1 ½ Cup Rice Krispies

Mix powdered sugar and dry milk powder thoroughly. Add peanut butter and melted butter or margarine. Stir in Rice Krispies. Form into walnut-sized pieces. For an added treat, dip in chocolate.


Peanut Butter Bites

Spread peanut butter on a Cheese Nips cracker. Top with another cracker, making a sandwich. Dip into melted chocolate Slide coated sandwich onto wax paper and let harden.

The greatest events that have been spoken of by all the Holy Prophets will come along so naturally as the consequences of certain causes, that unless our eyes are enlightened by the Spirit of God, and the spirit of revelation rests upon us, we will fail to see that these are the events predicted by the Holy Prophets. Food Storage and Preparedness Challenge Of The Week:


Food Storage Purchase 8 Cans of Tomato Sauce.

Family Gear Box This is a large container that holds heaver more specialized items that will make life easier in an emergency. These items are more suited for a mandatory evacuation. This week find the container (trashcan with wheels?)

Family Preparation Swimming is a great exercise for the whole family. If you don't swim then maybe you can take
lessons. Take time and run through the sprinkler. What ever you decide to do have fun and enjoy the kids or grandkids.

Spiritual Preparedness Think of one trait you admired about President Monson. Consider how you might incorporate that quality in your own life.

CARAMEL-RAISIN PUDDING

¾ c. seedless raisins 3 cups boiling water
½ c. brown sugar 1 c. brown sugar
½ c. milk 1 tablespoon butter or margarine
1 c. enriched flour 2 teaspoon baking powder
½ teaspoon vanilla ½ teaspoon salt
2 teaspoon butter or margarine
Soak raisins 5 minutes; drain. Combine sugar and milk; add dry
ingredients, raisins, and 2 teaspoons butter. Combine remaining ingredients; heat boiling; and cook for 5 minutes. Pour into greased 8x 12-inch baking pan and drop batter from spoon over hot sauce. Bake (350º) 30 minutes. Serve warm.
Tip: This is something like a cake in a caramel sauce. It is very good – kids will like it. It is best right out of the oven. If you prefer, it can be made without raisins, or use dates or chopped apple instead. Boil the sugar mixture while soaking raisins, greasing the pan and preparing ingredients. Don't mix batter until about 1 minute of boiling time is left or the baking powder will start working, leaving the batter flat in the pan. For extra cake increase batter by ½ .

CARMEL POPCORN

Pop 1 C. popcorn kernels and set aside

Combine and cook to the softball stage:
½ C. corn syrup ¼ C. water
1 C. brown sugar ½ C. whey powder or powder milk
½ C. margarine or (½ C. margarine powder, 1 T. water, and 1 T. oil)

Remove from heat and add:
1 tsp. vanilla ¼ tsp. baking soda
Pour over the cooked popcorn and stir until coated.

it, personalize it. Add to it what you think your family will need,

Family Preparation
            Have a practice disaster with family
members. Make it real and don't tell anyone in advance. See if your
evacuation plan works, can individuals work the windows to exit
from them? How long does it take?  What do you need to change?

Grinding Beans into Flour
When added to boiling water, bean flour thickens in only one
minute, and in three minutes is ready to eat. Bean Flours added
to baked goods increase vitamins and minerals and provide a
source of complete protein.
Bean flours store well and are great to have on hand for
"instant" soups, sauces, dips, and gravies. You can add bean
flour to almost anything you bake. They can be stored at room
temperature, but by refrigerating or freezing the flour, more
nutrients are retained.
You can grind beans in almost any grinder. Mills with
grinding stones cannot, however, grind soybeans, and must be
cleaned after each 2 cups of beans. You can do this by grinding
one cup of hard wheat after grinding the beans.
Pinto Bean Dip
½ med. Onion, minced
½ t cumin
1 T beef bouillon
½ t chili powder
½ t garlic powder
½ t salt
¼ cup picante sauce
2 cups cooked mashed beans
Mix and heat thoroughly. Add 1 cup grated cheese, if
desired. Serve hot, topped with chopped green onions and
tomatoes.
Quick and EZ Burritos
¼ cup each black bean flour, pinto bean flour, kidney bean flour
¼ t cumin
½ t chili powder
2 ½ cup warm water
¾ t salt
½ c picante sauce
Whisk dry ingredients into warm water in a medium
saucepan and bring to a boil over medium high heat. Stir until
mixture boils, then reduce heat and cover pan. Cook an
additional four minutes, stirring once. Remove from heat. Add
Picante Sauce. Spoon into tortillas and eat as burritos. Can be
used as a bean dip as well.

TAMALE PIE
Serves 8 to 10
1 lb. hamburger
1 Cup chopped green pepper
1 clove garlic, minced
1 (6 oz) can tomato paste
1 onion, chopped
1 (15 oz) can sliced ripe olives (optional)
1 (15 oz) can tomatoes
1 tsp. salt , dash of pepper
1 (12 oz) can corn, drained
1 ½ Cups sharp cheese, grated
1 Tbsp. sugar
½ Cup yellow corn meal
2 - 3 tsp. chili powder
1 Tbsp. butter
1 ½ Cups cold milk
½ tsp. salt
Brown the ground beef, green pepper, onion and garlic together. Drain the fat and add tomatoes, tomato paste, corn, olives, sugar, salt, chili powder, and pepper. Simmer 20 minutes until thick. Add cheese and stir until melted. Pour into 9x13-inch baking dish.  Make corn meal topping by heating milk in double boiler; add salt and slowly stir in corn meal. Cook and stir until thick (about 20 minutes), add butter and spread over top of meat mixture. Bake at 375' F. for 40 minutes.
MEAT PIE USING DRY SOUP MIX
Serves 20 - 25
6 Quarts water
1 (10 oz) can condensed tomato souop
2 Cups dry soup mix
2 lbs. frozen hash browns
1 (16 oz) can tomato sauce
1 (15 oz) can tomatoes
2 lbs. ground beef
6-7 (9-inch) unbaked pie shells 
If desired add left over vegetables, frozen carrots, corn, etc. Fry hamburger (if using fresh ground beef, or warm if using canned ground beef) until well done and break into tiny pieces. Add to above ingredients, place in unbaked pastry pie shells. Add top crust and seal edges well. Bake in oven at 450'F. for 25 minutes or cover with foil and freeze for future baking.

Everyone who owns a home recognizes the need for fire insurance. We hope and pray that there will never be a fire. Nevertheless, we pay for insurance to cover such a catastrophe, should it occur. We ought to do the same with reference to family welfare. President Hinckley, Nov Ensign 2002

Food Storage and Preparedness Challenge Of The Week:


Food Storage Purchase 8 Cans of Vegetables

Extra Item Purchase 30 lbs. Rice


Flu Kit Masks (make sure you have enough for your family), baby wipes, and kleenex

Family Preparation Now that you have a plan for saving, set a plan for reducing your debt. Pick one debt and work to get rid of it, then move on to another one

HAVING FUN WITH DRIED APPLES

Dried apples are an excellent snack right out of the can.
To reconstitute them, use equal parts of Dried Apples to boiling water. For example:
2 Cups dried apples 2 Cups boiling water
Let this stand at least 5 minutes. If you put this mixture through the blender, you will have applesauce. For variety, you may add 3 Tbsp. Cinnamon Heart Candy (or "Red Hots") to the mixture before you let it stand, or try some cinnamon and sugar mix in it.

APPLE CRISP
6 peeled apples ½ Cup packed brown sugar
½ Cup sugar 1 Cup rolled oats
2 Tbsp. water ½ tsp. cinnamon
4 Tbsp. butter Or margarine ½ Cup chopped nuts,
1 tsp. grated lemon peel optional
Slice 6 peeled apples (or you may use the equivalent dried apple slices reconstituted) and spread in greased 8x8 inch baking pan. Sprinkle water and ½ cup sugar onto apples. Mix the remaining ingredients and spread over apples. Bake at 350' F. for 45 minutes or until tender. Serve warm or cold. You may top with ice cream or whipped cream. You may also substitute hydrated dried apples, but cut down baking time 10 minutes.

APPLE BROWN BETTY
Pour 2 Cups boiling water over 4 Cups dried apples. Let stand 5 min.
TOPPING: Mix the following ingredients well.
½ Cup flour 1/4 Cup oatmeal
½ tsp. cinnamon 1/4 Cup brown sugar firmly packed
Then cut in 1/4 Cup butter. Place the apples and liquid remaining in a greased 9x9-inch pan. Sprinkle topping over the apples. Bake at 350' F. for 55 minutes.

Food Storage and Preparedness Challenge Of The Week:
Food Storage Purchase 8 Cans of Fruit
Extra Item Purchase 8 Rolls of Toilet Paper
Flu Kit Pain relief medications, cough and cold medications, bleach
Family Preparation Make a goal to have at least 3 months wages in savings. Sit down and make a plan for this to happen.
Spiritual Preparedness Read Mosiah 4: 6-12. Trust in the Lord and turn to him for guidance.

Rhubarb Cake

1 ½ cups brown sugar ½ cup butter
2 eggs 1 cup sour milk – add 2 tbsp vinegar or lemon into milk
1 tsp baking soda 1 tsp salt
2 ¼ cup flour 1 tsp vanilla
2 cups rhubarb
Topping:
½ cup brown sugar
1 tsp cinnamon
Bake in a 9 x 13 greased and floured pan. Bake at 350 for 45 minutes.
Serve with ice cream! Add raspberries or blueberries to replace some or all of the rhubarb. The will combine nicely together for a great dessert!

Rhubarb Crumble

½ cup melted butter ½ cup flour
1 ½ cups rolled oats 1 ½ tbsp flour
2/3 cup brown sugar 3 cups raw rhubarb
½ cup sugar

Combine melted butter, rolled oats, first amount of flour and brown sugar. Firmly press ¾ mixture into a 9 inch baking dish. Cover with rhubarb. Combine sugar and second amount of flour. Sprinkle over rhubarb. Cover with remaining crumb mixture. Bake at 350 for 30 – 40 minutes. Serve warm with ice cream.
