Food Storage and Preparedness Challenge Of The Week:
Food Storage Purchase 20 lbs. White Sugar or Honey
Extra Item Purchase Enough dish soap to last 3 months
72 Hour Kit 1 change of clothing (pants, shirt, socks,
underwear). Place in Zip Lock Bag
Family Preparation Obtain a family utility box- Action
Packer, cooler with wheels, cardboard box, etc.

Spicy Bean and Rice Casserole
1 tbsp oil
3 cloves garlic, minced
1 med onion, chopped
1 green pepper, seeded and diced
1 28 oz can crushed or diced tomatoes
1 ½ c cooked beans, black, kidney, pink, pinto
1 can corn
1 cup uncooked long grain rice
¼ c water or tomato juice
1 tbsp chili powder
1 tsp oregano
¾ c shredded mozza cheese
½ c shredded cheddar cheese
dash cayenne pepper
In large skillet, heat oil. Add garlic and onion and saute. Add pepper and cook a few minutes. Add remaining ingred except cheese. Reduce heat and simmer covered for 20 min or until rice is tender. Uncover, sprinkle cheese on the mix and heat in oven at 350 for 15 minutes until cheese melts.
Double Chocolate Popcorn Balls
½ c sugar ½ c corn syrup
¼ c margarine 2 tbsp cocoa
8 c popcorn 1 c m&m's
Combine sugar, corn syrup, margarine and cocoa in medium saucepan. Bring to a bil. Add popcorn, stirring until evenly coated. Remove from heat. Stir in m&m's. Cool slightly. Shape into 2" balls. Makes 18.
