 52 Weeks to Family Preparedness for Two
Week 21

Food Storage and Preparedness Challenge Of The Week:
Food Storage Purchase 8 Cans of Fruit
Extra Item Purchase 8 Rolls of Toilet Paper
Flu Kit Pain relief medications, cough and cold medications, bleach
Family Preparation Make a goal to have at least 3 months wages in savings. Sit down and make a plan for this to happen.
Spiritual Preparedness Read Mosiah 4: 6-12. Trust in the Lord and turn to him for guidance.

Rhubarb Cake

1 ½ cups brown sugar ½ cup butter
2 eggs 1 cup sour milk – add 2 tbsp vinegar or lemon into milk
1 tsp baking soda 1 tsp salt
2 ¼ cup flour 1 tsp vanilla
2 cups rhubarb
Topping:
½ cup brown sugar
1 tsp cinnamon
Bake in a 9 x 13 greased and floured pan. Bake at 350 for 45 minutes.
Serve with ice cream! Add raspberries or blueberries to replace some or all of the rhubarb. The will combine nicely together for a great dessert!

Rhubarb Crumble

½ cup melted butter ½ cup flour
1 ½ cups rolled oats 1 ½ tbsp flour
2/3 cup brown sugar 3 cups raw rhubarb
½ cup sugar

Combine melted butter, rolled oats, first amount of flour and brown sugar. Firmly press ¾ mixture into a 9 inch baking dish. Cover with rhubarb. Combine sugar and second amount of flour. Sprinkle over rhubarb. Cover with remaining crumb mixture. Bake at 350 for 30 – 40 minutes. Serve warm with ice cream.
